Experience Andalimanian pepper – a fascinating berry from the remote mountain forests of North Sumatra in Indonesia. Although called "pepper," it is not botanically a pepper, but a wild berry related to the famous Sichuan pepper. This rare spice berry can be found in many Asian countries, from northern India to southern China, but its origin lies in Sumatra.
The harvest takes place exclusively in the wild between August and November in the remote mountain forests of North Sumatra. This unique origin gives Andalimanian pepper its exceptional aromatic quality. It is also called "Batak pepper" because it is an essential ingredient in the traditional cuisine of the Batak people who live in this region.
The aroma profile is surprising and unique: very floral and citrusy with distinct notes of rose, lemon, and lemongrass. Unlike other Zanthoxylum species, this pepper has almost no numbing effect and is also completely non-spicy. This makes it exceptionally versatile and easy to use – even for sensitive palates.
Using them requires a little care: don't use a pepper mill, as the shape of the berries could damage it. Instead, crush them with a mortar and pestle or the flat side of a knife – they remain very light and brittle. Their combination with seafood, fish, shellfish, light meats, and poultry is surprising and extremely pleasant.
You can use it to flavor sauces, vinaigrettes, marinades, broths, and soups. Its lack of spiciness makes it particularly easy to use. Ideal for tuna tataki, teriyaki sauce, roast chicken, or seafood carpaccio. It's also surprisingly versatile in sweet applications: on cream cheese with honey and nuts, in fruit salads, or in cocktails, mocktails, and lemonades.
